How to use this kit

Start the fire with hardwood lumps for a fast, hot bed of coals (10–15 min). Add pillow briquettes once the lumps glow grey-white — they'll hold a steady 250–300 °C for the next 2 hours. For smoked dishes, toss a handful of smoked or flavoured lumps in the last 30 minutes so the aromatic compounds land on the food, not in the fire.
